I usually spell it "bok."
It is funny that "balk" is a homonym, though.

I tried doing a google search but all I got was 'bok bok chicken hawk' along with 'balk balk chicken hawk' and 'bawk bawk chicken hawk'.

You got it. I raised the stupid bloody things back when, and the bobbing you describe is alternating between the only two thoughts a chicken has:
1) Can I eat you?
and
2) Can you eat me?
I'd put it: Buk ... buk ... buk ... bu-kaaaaawk?
Maybe I've thought about this too much.
